Just a quickie!

Well, I was glad to see the last 3 posts finally showed up. No one commented yet, so I guess people quit expecting me to write anything for a while! But I am more committed to my blogging now, so check back!

Anyway, my sister is in town now, and it's the first time I've seen her since she lost 17 pounds on the protocol. She still has a couple of weeks left too. She looks great! She doesn't have that gaunt, drawn look that people sometimes get when they lose weight quickly--a sign that the hcg is re-shaping the body properly. I'm proud of her!

I'm more and more determined to do a short round between Thanks giving and Christmas. It seems most weight is lost in the first 3 weeks, so why not do a sort round and make it count?

All the trick or treat candy is around, but so far I've avoided it. The only thing I've "cheated" on is bubble gum--lots and lots of bubble gum. At least its not candy! I noticed that with Halloween and the elections, I've been wanting to do too much nibbling. I at almost a whole can of macadamia nuts, and got a big tummy ache! Won't do that again! I want to learn how to make my own vegetable chips that I can grab when I'm craving something. Any recipes, anyone?

Well it's late again--but fortunately with the time change, it's not as late as I think! Have a great day, and thanks for reading! Until next time, Merry

Hello,

Regarding your request for vegetable chips, here is a very simple oil-free potato chip recipe. These are made in small batches in the microwave and are really nice for a snack that will help curb your hunger. For best results, you'll want to make the potato slices uniformly thin. You might consider buying an inexpensive mandolin vegetable slicer as it works perfectly for this. I bought one many years ago, but it was very expensive. Still you can find much cheaper ones these days. You might check out Ebay and find a bargain there! Anyway, here is the recipe. For the best taste, let the chips get a little golden around the edges. Be careful, though, not to let them burn!

No Oil Microwave Potato Chips

Ingredients:
1 potato, peeled and sliced very thin (you can leave peel on)

Salt

Herbs, such as dill or your favorite flavoring.

Directions

Place a few potato slices on parchment paper, sprinkle with salt and herbs. Microwave in batches for about 2-3 minutes until each slice is crisp.

Best wishes,

The Tofu Lady

PS - I believe I recall hearing that you can also use this recipe with sweet potatoes, but I haven't tried it though.

Hi, Tofu Lady! Thanks for the recipe--I may try that with the sweet potatoes, since they are lower on the index as far as carbs go. Thanks so much!--Merry
